COOKING WITH CILANTRO

Our first Ingredient Based theme at first seemed really intimidating, but as we all surveyed each others offerings at the "exchange table" the realization hit us, we are a creative bunch! I will tell you that the food at this meeting was the best thus far. I am still amazed at the amount of love and effort poured into the food.
First up is Aisha, she presented us with a Turkey Sausage & Vegetable Medley Soup garnished with cilantro. Amina is new to the Collective & she sure made an entry! She amazed us with a spectacular Beef & Bowtie Casserole with Assorted Cheeses & cilantro. Faizah made Jerk Chicken Kabobs with Cilantro Alfredo Noodles which were a crowd pleaser. Fatma made hearty Meatballs & Texas Toast. That dish was one of the favorite dishes of the night. Safa B. knows how to work a kitchen. She delighted us with Vietnamese Spring Rolls stuffed with shrimp, rice noodles, basil, mint & fresh cilantro. The wraps were accompanied by a savory & rich peanut sauce. Safa S. made a hearty Slow Cooked Salsa Shredded Chicken & Guacamole to top corn tortillas. It was mouth watering.
There were plenty of highlights from this meeting. First off, our newest member, Aminah, made this spectacular Beef & Bowtie casserole. It was amazing mashaa Allah. Guacamole has never been my favorite...well that is an understatement. I actually never liked it one bit. HOWEVER, Safa S made it with cilantro and lime and I actually loved it! This was the biggest surprise of the evening. Fatma's Meatballs were delicious...I can't understand how she makes ground beef taste like that! I suspect even when she posts the recipe, it could not be duplicated. Faizah's kabobs were so flavorable and not dry. Oh...the ice cream and chocolate muffin was a definite cherry on top of a wonderful day :)
